Can I use my existing drywall (ceiling) when converting a regular shower to a steam shower, or do I need to use cement board?

Cement board is really the way to go.  But regardless, which ever way you choose, make sure the ceiling material is waterproof.  Meaning, if you tile on top of the drywall, make sure to use a water proof membrane before the tile is installed, and, the grout lines need to be filled with a waterproof grout.
Or use a slab material (one flat surface) such as cultured marble.  If you choose a slab material, make sure to find out if the manufacturer states their product is waterproof for steam showers.
Remember, heat rises, so while you may be bathing at 120 it will be much hotter at the ceiling.
