I am having a steam room built in my home and my contractor has done all the preparation for the equipment. He used Pex for the water line and galvanized pipe into the steam room. I heard somewhere that galvanized should not be used. Is that true and if so why not?

Galvanized will begin to rust and stain the area around your steam head.

Steam generators are best installed with Copper pipe & fittings and Brass Unions.
Follow the manufacturers installation guidelines to ensure your steam generator is installed to their specification and you do not void your warranty.

SteamSaunaBath offers fittings packages for all model steam generators to ensure the appropriate fittings are used.
