I am a GC working on a sauna room replacement boards.
I need to replace  an area on the wall, a leak damaged some cedar wood.
Is there and industry standard for T & G?

There are industry standards for all types of wood, but when replacing select boards within a sauna bathing environment, matching thickness, width and color are the order of the day. 

One may cut a section of the board and visit a local lumber professional.  These folks are wood specialists and having the board in-hand simplifies the identification process.  One could also reach out to a sauna supplier and share the specific room information and measurements of the boards in question.  A qualified sauna dealer can identify the material in question based upon sauna heater brand, year built, thickness of the board and/or where the room was purchased.

Additionally, Cedar wood has natural water resistant qualities.  Look closely to see if the material can be sanded.  Staining can often be removed in this way.
