For our steam rooms we have a Steamist boiler with a CP-1 control package.  Is there a way to test the thermostat sensor to determine if it is the sensor or pc board that is faulty?

Yes.  The Steamist CP-1 control package steam room sensor is what gets tested.
Get a multimeter and set it to Ohms.  Take the meter probes to the wire ends of the sensor cable.  At a room temperature of 70 degrees F, you will get a reading of 28kOhms, at a room temperature of 115 degrees F, you will get a reading of 10kOhms.
Outside of that range will determine if the sensor is faulty.  If the sensor tests as good, then look to the pc board for replacement.
Do note that it is rare for the pc board to fail.  It is most commonly the sensor that fails due to member tampering inside the steam room.
